Rules people get wrong
- The 2-stage cooling rule: food must drop from 135°F to 70°F within the first 2 hours. If it does not reach 70°F in 2 hours, it must be reheated to 165°F and restarted, or discarded.
- Cooler storage hierarchy is strictly determined by minimum internal cooking temperatures: poultry (165°F) must ALWAYS be stored below ground meats (155°F), whole meats (145°F), and seafood (145°F).
- Handwashing duration: scrub hands and arms with soap for at least 10–15 seconds; the entire handwashing process takes at least 20 seconds total.
- The Big Eight/Nine food allergens (milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soy, sesame) require dedicated prep surfaces or thorough sanitizing to prevent cross-contact.
- Never thaw TCS food at room temperature. The four safe thawing methods are: in a refrigerator at 41°F or below, submerged under running potable water at 70°F or below, in a microwave (if cooked immediately), or as part of the cooking process.
